Ingredients

  • 1 pound boneless, skinless chicken breasts, thinly sliced

  • 2 tablespoons olive oil

  • 1 tablespoon lime juice

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 ea red bell pepper thinly sliced

  • 1 ea red bell pepper thinly sliced

  • 1 onion, thinly sliced

  • Tortillas, for serving

  • Optional toppings: sour cream, guacamole, shredded cheese, salsa

Directions

  • Marinate the Chicken: In a large bowl, combine 1 tablespoon of olive oil, lime juice, chili powder, cumin, garlic powder, paprika, salt, and black pepper. Add the sliced chicken and toss to coat evenly. Let it marinate for at least 30 minutes to an hour in the refrigerator.
  • Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, or until fully cooked. Remove the chicken from the skillet and set aside.
  • Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and onion, cooking over medium-high heat until they are tender and slightly charred, about 5-8 minutes.
  • Combine: Return the cooked chicken to the skillet with the vegetables. Stir well to combine and cook for another 2-3 minutes until everything is heated through.
  • Serve: Warm the tortillas according to the package instructions. Serve the chicken and vegetable mixture on tortillas, topped with your choice of sour cream, guacamole, shredded cheese, and salsa.
