Ingredients

  • 1 pound flank steak, thinly sliced against the grain

  • 2 tablespoons vegetable oil, divided

  • 4 cups broccoli florets

  • 3 cloves garlic, minced

  • 1 tablespoon ginger, minced

  • For the marinade and sauce
  • 1/2 cup low sodium soy sauce

  • 1/4 cup water

  • 2 tablespoons brown sugar

  • 1 tablespoon cornstarch

  • 1 teaspoon sesame oil

Directions

  • Marinate the Beef: In a bowl, whisk together half the soy sauce, 1 tablespoon of water, 1 tablespoon of vegetable oil, and 1 tablespoon of cornstarch until the cornstarch is dissolved. Add the sliced beef to the marinade, stir to coat well, and let it sit for at least 15 minutes.
  • Prepare the Sauce: In another bowl, combine the remaining soy sauce, water, brown sugar, and sesame oil. Mix until the sugar is dissolved. Set aside.
  • Cook the Broccoli: Heat 1 tablespoon of oil in a large pan over medium-high heat. Add the broccoli florets and stir-fry for about 3-4 minutes, or until they are bright green and slightly tender. Add a splash of water, cover the pan, and let the broccoli steam for about 2 minutes. Remove the broccoli from the pan and set aside.
  • Cook the Beef: In the same pan, add the marinated beef and spread it out. Let it sear without moving it for about 1-2 minutes, then stir-fry for another 2-3 minutes, or until it’s nearly cooked through. Add the garlic and ginger, and stir-fry for another 30 seconds.
  • Combine and Finish: Return the broccoli to the pan. Pour the sauce over the beef and broccoli. Stir and cook for another 2-3 minutes, or until the sauce has thickened and everything is heated through.
  • Serve: Serve your beef and broccoli hot over steamed rice or noodles. Enjoy!
